Villa Conchi make their Cava by the traditional method in Catalonia, from a blend of native Xarel·lo, Macabeo and Parellada. Fine, persistent bubbles and a clean, appley freshness, with lees ageing bringing brioche notes to the glass. Pesticides, synthetic fertilisers and other high-intervention treatments are avoided in the vineyard.
