Domaine William Fèvre Chablis Grand Cru, 'Vaudésir' 2021
William Fèvre make some of the world’s favourite Chablis. Now completely organic and in the capable hands of winemaker Didier Seguier. Fèvre own 15% of the total Grand Crus in Chablis. Their policy is minimalistic intervention: let the grapes and terroirs talk. The use of oak is minimal, with older oak used merely to add texture to the wines.
50–60% fermented in French oak barrels (aged 6 years on average). The remainder is vinified in small stainless-steel vats. Aged 14–15 months, of which 5 to 6 months on fine lees in French oak barrels for 50 to 60% of the harvest. The end of maturation occurs in small stainless-steel vats. Tank sample.
The 2021 William Fèvre Vaudésir Grand Cru is widely regarded as a graceful, refined, elegant expression of the Grand Cru. While not as overtly powerful or intense as the blockbuster 2019 or 2020 vintages, it wins acclaim for its clarity, purity, and site-specific character, especially in the floral and mineral dimensions
