Louis Michel Chablis 1er Cru Butteaux 2023
A complex, mineral Premier Cru Chablis from a family domaine that ferments only in stainless steel to let the terroir speak.
From four parcels on the Butteaux slopes, just two kilometres from the winery. Baked apple, toasted notes, wet stone and undergrowth on the nose; a vibrant palate with a mouth-watering finish.
Drink it with: Oysters, sole meunière, roast chicken or Comté.
When to drink: Lovely now, but rewards a few years in the cellar.
The producer: The Michel family have made wine in Chablis since the 19th century, on slopes first farmed by Cistercian monks. Guillaume Michel now runs the domaine's 25 hectares, using natural yeasts and stainless steel only.
Sustainability: 80% of the vines are farmed organically, the domaine holds the highest level of HVE sustainability certification, and hedgerows and bees are part of the vineyard's biodiversity.
