About This Wine...
Nice red violet colour. Attractive and complex nose, fruits like plums, raisin, ripe red berries, well assembled with spicy notes like pepper, and some touches of cocoa and smoked tones. Vibrant and well balance acidity lends a fresh and tasty palate. Soft and velvet tannins gave a rounded and persistent aftertaste. An easy-drinking wine.
VINEYARD NOTES: Caperana Vineyards – Low yields. Deficit controlled regime. Careful viticultural management searching for the proper ripeness of the tannins and avoid green flavours.
VINTAGE NOTES: The spring was colder than the previous years. Yields were 10% higher than previous season. Due to the lower temperatures the wines were more fresh and fruity in aromas, with a well balanced acidity.
FERMENTATION NOTES: 5 days cold maceration. Selected yeasts. Temperature controlled fermentation (25-28°C). 4 pumpovers per day. 15 days maceration on the skinsFull malolactic fermentation.

SERVING SUGGESTIONS: Open one hour before serving at room temperature between 15° to 16° C. Excellent with grilled meats, especially Tandoori style. Great with a variety of savoury dishes, rich beef and game casseroles. Fit very well with fusion foods.
