SERVING SUGGESTIONS: Open one hour before serving at room temperature between 14° to 16° C. Excellent with a variety of red meats, especially prime beef tenderloin, braised beef cheek, lamb chops, filet mignon; also good with wild boar, ostrich and a large array of cheeses.
TERROIR DESCRIPTION: The grapes come from carefully selected, low yields 50-60 years old vines from Block 16, planted on the slopes of Andean foothills at Hacienda San Jorge in Curicó Valley. Because of its proximity, this special terroir enjoys a cooler longer ripening period producing well-ripened grapes with small berries and soft tannins to produce this superb and delicate Cabernet Sauvignon.
VINEYARD NOTES: Low yields vines (1.4 kg/plant) – Block 16. Drip irrigation, deficit controlled regime. Careful viticultural management searching for the proper ripeness of the tannins and avoid green flavours.
VINTAGE NOTES: The spring was colder than the previous years. Yields were 10% higher than previous season. Due to the lower temperatures the wines were more fresh and fruity in aromas, with a well balanced acidity.
Unfiltered. Non cold stabilized.
Chile’s first inhabitants believed that life began from the union between Mother Earth and the Sun. This is celebrated through
Paso del Sol – a range of friendly, easy drinking varietals which express the perfect union of each grape variety with the terroir. A long tradition of vineyard ownership defines Terra Mater’s cultivation of their vines, reflecting the best their terroirs – Isla de
Maipo and the Curico Valley – can offer. They rigorously practise sustainable farming methods and represent the perfect
coordination of top quality wine making practices, searching for innovation and the desire to achieve the best their vineyards can deliver through the creation of wines that pay homage to the generosity of Mother Earth.
