About This Wine...
The Estate
The 25 hectare Domaine cultivates the taste of tradition and works passionately and with the utmost respect for the terroir. The world-renowned winery of Louis Michel et Fils brings together all Crus and fully demonstrates the myriad facets of this great wine. On average, the vines are 40 years old and annual production is 150,000 bottles of which 86% is exported. All appellations are developed in stainless steel
tanks in order to flavour the complexity and purity of the aromas and to respect the taste of authentic Chablis.
Topography
Portlandian. Right bank plateaux. Very stony topsoil, rich in organic matter. Fine limestone earth.
Vinification
With no added yeast, long fermentation using natural yeast, in temperature-regulated tanks. Spontaneous malolactic fermentation.
Blended in tanks at the end of vinification.
