Winery established in 2008 by Juan Luis Cañas from the well-known Luis Cañas family.

The Dominio de Cair winery, a brand of Bodega Luis Cañas, produces Cair Selección La Aguilera from 40 to 50-year-old vineyards located at an altitude of 800 metres above sea level, in a pristine area surrounded by forests, in the very heart of the DO Ribera del Duero. After a meticulous selection, the Tempranillo grapes of this Spanish red wine were harvested by hand and selected again in the cellar. The grapes underwent a cold-maceration in order to extract colour and aromas, and a subsequent alcoholic fermentation in stainless steel tanks. Malolactic fermentation took place in new French and American oak barrels (50% – 50%), where this Crianza red wine was subsequently aged for 14 months.

About This Wine...

The Wine

100% Tempranillo from vines averaging 42 years old.

Colour: Black cherry with good depth of colour.
Nose: An intense nose of fine wood, leather, cigar box, dark chocolate & fruit combine with sweet tannins to produce a beautifully balanced, elegant red wine.
Palate: Full and powerful on the attack with good balance. A meaty, juicy mouth feel with sweet tannins. Long, lingering finish.
Food Matches: This wine pairs well with tapas dishes, grilled red meats and hard cheeses.

Grapes are picked by hand and placed in small plastic crates. Upon entering the winery, bunches undergo a manual selection and then individual grapes are sorted based on their weight.
Following this double selection process, they are de-stemmed and crushed before undergoing alcoholic fermentation in small stainless steel tanks.
After its primary fermentation, malolactic fermentation takes place in new French and American oak barrels for 14 months. It later spends at least 12 months in the bottle to round its aging.

The Winery

After devoting his life to Bodegas Luis Cañas, the family winery in Rioja Alavesa, and later to Bodegas Amaren, built to honour the memory of his mother, producer Juan Luis Cañas embarked on the challenge of setting up a new project in Ribera del Duero.
After a long search to find the right terroir and vineyards, Juan Luis Cañas settled in La Aguilera, a small hamlet in the northern part of the DO, rich in old vines planted in chalky-clay, sandy and gravel soils at an altitude of 800-950 metres above sea level.
Focused on quality rather than quantity, Dominio de Cair applies a balanced and rational viticulture in its 85 hectares of
controlled and own vineyards, based on maximum respect for the environment with yield controls and modern facilities in order to obtain great wines that express the essence of the land where they were born.
