About This Wine...
The ancient southern French wine-producing region of ‘La Clape’ is distinctly Mediterranean. The vineyards slope gently donw towards the shoreline and bask in over 300 days of sunshine per year. By night cool sea air carries with it moisture that not only allows the grapes to achieve their full flavour and ripeness but also imparts a freshness which is reflected in the elegant character of the finished wine.
The ‘Classique’ range of wines are smooth and impressive, made form hand-picked grapes and bottled at the estate.
Bourboulenc (40%), Grenache (20%), Roussanne (20%), Marsanne (20%).
Terroir: Hard limestone screes of the mountain of La Clape. Warm and dry climate tempered by the Mediterranean. Slow ripening thanks to cooler nights on the shores of the sea.
Growing method: Sustainable practices according to ASCERT charter for respect of the environment and complexity of the wine: composted pomace amendment, crushed unwanted shoots, plowing, biodegredable sprays, no insecticides.
Harvest: Two-months-long crop according to maturity of each varity. Grapes are hand-picked and selected.
Vinification: Total de-stemming, slow pressing, juice is gravity-fed into vats, each variety is vinified separately. Cleaned from bad lees twice, fermentation in 1-2 years-old 300 L barrels in a traditional temperature-controlled cellar.
Ageing: stirring on fine lees in barrels during 5-6 months. Natural static clarification by gravity, no fining nor filtrating.
Tasting notes: Limpid, pale yellow wine with golden highlights.Rich and complex nose, with a blend of white fruits and flowers, fresh and sweet spices and honey, nuts. Plentiful, structured and creamy mouth unveiling a lovely aromatic intensity. Long and fresh elegant finish.
Ageing potential: Fresh and fruity when young, gaining more complexity after 5-10 years. Potential of 15-20 years.
Food pairing: Drink as an aperitif with marinated sardines. Perfect with fish, veal or poultry in sauce, as well as more spicy dishes (curry, saffron). Excellent match with cured cheeses (époisse, roquefort, stilton).
