About This Wine...
The ancient southern French wine-producing region of ‘La Clape’ is distinctly Mediterranean. The vineyards slope gently donw towards the shoreline and bask in over 300 days of sunshine per year. By night cool sea air carries with it moisture that not only allows the grapes to achieve their full flavour and ripeness but also imparts a freshness which is reflected in the elegant character of the finished wine.
The ‘Classique’ range of wines are smooth and impressive, made form hand-picked grapes and bottled at the estate.
Mourvèdre (55%), Syrah (30%), Grenache (10%), Carignan (5%)
Terroir: Hard limestone screes of the mountain of La Clape. Miocene pebble terrace. Warm and dry climate tempered by the Mediterranean. Slow ripening thanks to cooler nights on the shores of the sea.
Growing method: Sustainable practices according to ASCERT charter for respect of the environment and complexity of the wine: composted pomace amendment, crushed unwanted shoots, plowing, biodegredable sprays, no insecticides.
Harvest: Two-months-long picking according to maturity of each varity. Grapes are hand-selected.
Vinification: Total de-stemming, juice is gravity-fed into vats, traditional temperature-controlled fermentation. Very long maceration (50 days) with no trituration so as to extract only the finest elements.
Ageing: Syrah and Mourvèdre are blended then nursed in 3-4 years-old barrels during 10 months.Grenache is aged in vat to preserve its fruit. Natural stabilisation, static clarification by gravity, no fining nor filtrating.
Tasting notes: Deep red colour with hints of black.Complex bouquet with a blend of ripe red and black fruits, spices, licorice and tobacco flavours hilghlighted by the typical minty touch of La Clape. Full-bodied and elegant mouth structured by dense and remarkably silky tannins. Great lengh endowed with a nice freshness.
Ageing potential: Fresh and fruity when young, gaining more complexity after 5-10 years. Potential of 15-20 years.
Food pairing: Wonderful with game, red meat and sauce dishes. Try it with a serious T-bone!
Service: Decant a few hours and serve at 18°C/60°F.
