This wine has not been filtered and the winemaker recommends decanting before serving.
Vineyard: 21 plots of old Mencía vines located in the villages of Valtuille de Arriba and Pieros.
Viticulture: Organically grown grapes
Average age of vines: 60 years+
Altitude: 480 – 600 m
Terroir: Poor red clay soils
Plot by plot vinification. Hand-picked grapes rapidly transferred to harvest reception in 20kg
crates. Sorting table. De-stemming and light crushing.
Alcoholic fermentation using indigenous yeasts in stainless steel vats with periodic pump-overs.
Malolactic fermentation in barrels.
Ageing: 15 months in 300and 500 litre barrels. French Oak barrels from the forests of Vosges, Allier and Bourgogne.
Age of barrels: First and second-fill barrels
Fining with natural gelatine. No filtering or cold stabilisation.
Ancestral vine-growing methods have been embraced, such as pruning in winter, ploughing, manual canopy management to control yields and soil management. No weedkillers are used; nor are systemic products sprayed which may affect the biological balance of the vineyard. Instead, environmentally-friendly viticultural methods are preferred. The aim for each vineyard is to maintain balanced yields, in order to produce wines that are more complex and expressive and reflect more clearly the soils in which they are grown.
