In January 2019 Bodegas Fernando de Castilla released a new premium range called ‘Singular’. For now this includes two extremely old wines; bottled in December 2018 in a limited run of 600 half bottles. They come presented in a wooden box. This offer is of very limited availability and closes on 30th April 2019.
Some years ago Fernando de Castilla was able to purchase three barrels of an incredibly old Oloroso. The barrels had been stored in a private cellar of a prominent Jerez family for nearly 100 years. The wine has been used for family occasions for many generations until 2015 when they decided to sell what was left due to house renovations.
The Singular Oloroso is dark mahogany in colour. The aroma is powerful and complex with notes of oak and walnut. Full flavoured, intense and structured with a very long finish. The wine is without a doubt, one of the oldest and most special sherries available today.

Pedro Ximenez Singular
In 2012 Fernando de Castilla acquired nine barrels of an extremely old Pedro Ximenez sherry from a historic bodega in Jerez that no longer exists. These barrels belonged to a small batch that had been aged statically for many years in the noblest part of the cellar. The average age of the wine is more than 60 years.
The singular Pedro Ximenez is jet black in colour with very concentrated aromas of nuts, figs, dates, leather and tobacco. Very dense on the palate, sweet and rich with a long aftertaste.
A wonderful example of this style of wine. Truly outstanding and rare.
